Ackee and Saltfish

Learn how to make Jamaica's national dish.

Instructions

Drain the salt cod and discard the water. If the fish is too salty, then boil in water for 20 minutes.
Heat the oil in a large frying pan and fry the onions, spring onions and scotch bonnet pepper until the onion is transparent.
Add the salt fish and fry, stirring constantly for around 3 minutes.
Add tomatoes, garlic, thyme and ackee.
Toss very lightly, trying not to break up the ackees. Add salt and pepper to taste and serve.

My absolute favourite dish............ born here, London, parents from Jamaica, but I find the scotch bonnet a little too hot, Im a bit of a weak heart when it comes to pepper so I substitute with sweet peppers and black pepper and my kids will eat it as well, mmm fantastic............Larry
