For those who love ackee and who are vegetarian, this is the dish for you!
In a large saucepan, heat some oil. Add the onions, spring onions, scotch bonnet pepper, green and red peppers and the tomatoes. Allow these to cook for around 5 minutes
Add the ackee and stir slowly (when adding/mixing the ackee, take care not to damage or mash up the ackee - the more whole the ackee the better).
Season with salt and pepper and let it simmer for 20 minutes or until all vegetables are soft.
Serve and enjoy.
