Chicken Tortilla Soup

A nice Mexican inspired dish for you to try


Cut the chicken into bite-sized pieces and cook in a saucepan with the oil until it is tender, stirring continuously.
Remove the chicken and place into a bowl.
In the same saucepan, heat 15ml oil and simmer the onion and garlic until they are soft.
Add the chilli powder, tomatoes, oregano, chicken broth and water. Stir and bring it to the boil. Reduce the heat then simmer for 10 minutes.
Add the corn kernels, white hominy corn, chilli peppers, black beans, coriander and the chicken and stir.
Simmer for a further 10 minutes.
Ladle soup into bowls and garnish with the tortilla chips, avocado, cheese and spring onion.
